The cyser project has run into a few snags. So when fermentation slowed dramatically today, only three and a half days into active fermentation, I was very worried that I had a stuck fermentation. This is when fermentation stops before all the sugar is consumed, usually for vexing reasons. But when I opened the lid, and saw the golden color of the cyser, I knew things were on-track. When cider ferments, it turns from a dark brown to a golden color. This delicious color was a sure sign that fermentation was right on track. And the gravity proves my point (notice the hydrometer floating in the cyser). After only a few days of fermentation, after a painful start, the gravity dropped from 1.090 to 1.010. That's a lot of progress for such a short time. Fermentation should finish up in the next day or so and this cyser should be ready for racking this weekend.
